Anti-Inflammatory, Body and Mind Boosting Salad Recipe

Hello All! With the rainy season here in Seattle, it is easy to get lost in the overcast and feeling less energized than usual. A huge gift I’ve given myself this season is to take the absolute best care of myself, mentally, spiritually, and physically. Embracing my mostly raw plant based diet, taking my vitamins and getting out into Earth anyway 🙂

A game changer for me this season has been beet root! Aside from drinking beet juice every day, I have also been trying to add more beets to my diet. They have been working wonders for my circulation and I feel so grateful! They are also great for treating inflammation, energy deficiency, blood pressure, and are packed with vitamins!

Earth never stops providing us with such tasty food and healing, so I thought I would share a recipe I threw together the other day in hopes you might try it 🙂

This is a super simple salad to make and makes two servings. One for you and a loved one, or a tasty meal for later! It is not only delicious and filling, but filled with some of my favorite healers. The apple cider vinegar dressing is one you can use on many different salad variations also 🙂

For the dressing, you will need:

1 TBSP raw honey (make sure this is raw, local, and environmentally friendly for the bees please 🙂 )

2 TBSP olive oil

1 TBSP Apple Cider Vinegar

1 TBSP fresh lemon juice or half a lemon, squeezed

1 tsp of salt

1 tsp of pepper

Add all of these ingredients together and whisk away 🙂

(Feel free to adjust salt and pepper according to your taste)

For the salad, you will need:

1 head, romaine lettuce, chopped

1 cup spinach

1 cup chickpeas (I use a can and save the rest for a snack later 🙂 )

4 whole cooked beets, chopped (I buy them pickled with vinegar at the store, but you can use canned, raw, or cook your own at home 🙂 )

1 Cucumber, peeled and chopped

1/2 avocado, sliced

Small handful of cilantro, chopped

To make:

I find it easiest to wash and prep all my veggies before diving into the salad making.

Once prepped, add spinach and romaine to a large bowl. Toss in dressing and don’t be afraid to use your hands 😉

Plate/Bowl your salad and add chickpeas, cucumber, beets, and avocado.

Top with Cilantro.

The most important step is to take a moment, enjoy your salad and thank Earth for all the love and healing.
