I am so excited to share a super tasty recipe with you all today! Black bean tacos found their way into my life a little over a year ago. As someone who gets most of their protein from plants, I have had to get quite creative. This recipe not only contains all the benefits of black beans (contain great source of fiber, supports healthy bones, lowers blood pressure for example!), but that of many more healers! I also try my best to refrain from eating nightshades which can contribute to inflammation for those with auto immune conditions. This includes tomatoes, which I know are a big part of tacos. But this recipe is truly delicious on its own and I hope it finds its way to your table with love 🙂
To make, you will need:
2 Tbsp coconut oil
1/2 C chopped onions
2 Tbsp of chopped garlic
Chunk of ginger root, cut in half
3/4 C peeled and chopped carrots
1 C sliced mushrooms
1 oz can of black beans
8 corn taco shells (makes 10 tacos with smaller shells)
2 Tbsp olive oil for taco shells to crisp
1 ripe avocado for topping
1 tsp Oregano
1 Tbsp Cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp turmeric
Salt to taste, Pepper to taste 🙂
Over medium heat, add coconut oil. Add garlic and onion, cook until translucent. Stirring often, not to burn the goods 🙂
Add ginger root, carrots, and mushrooms. Cook for 5 minutes, stirring often.
Add all dry spices and entire can of black beans. Give a good stir, cover and cook for 5 minutes.
Give another good stir and taste test to see if you’d like to add more salt or spices.
Remove ginger root chunks and let cool for a few minutes.
While cooling, I recommend making the medium crisp shells 🙂
For taco shells, add olive oil to small pan and add a few tortillas at a time. Allow to cook for a few seconds on each side and then fold into shells. Cook on each side for a minute or so each. Salt with Himalayan pink salt 🙂
I then chop my avocado into desired size.
I usually plate tacos straight from the pan but feel free to add to a dish for guests to serve themselves 🙂
