Carrot Fries

Hello beautiful lights, may you be experiencing peace and gratitude today and every day!

Nearly three weeks ago, I wrapped up a life changing elimination diet.  This anti inflammatory approach required me to remove all sugar, gluten, soy, dairy and nightshades from my diet for three whole weeks!  After being in remission with my vasculitis for two years, I had an unexpected flare up.  This was a chance for me to see if I could control my inflammation naturally.

I am happy to report that this diet not only changed the foods I was eating but has given me so much relief from my inflammatory symptoms! Don’t get me wrong, this was not an easy diet. I missed my sugar and still dearly miss my nightshades, but it has led me to finding alternatives for some of my favorite snacks and now I get to share them with you 🙂

These carrot fries are some of my favorites to eat when I’m craving fries.  Not only is this recipe super simple, but they contain all natural healers! I found so many different variations online but I find this basic recipe to be a tasty starting point. You are always welcome to add any extras to this recipe 🙂 Enjoy!

You Will Need:

-2 bunches of carrots (Makes a large bowl of carrot fries)

-Olive Oil

-Himalayan Pink Salt

-Black Pepper

To Do:

First, I give my carrots a good soak and a rinse. I then remove the tops and give the carrots a quick subtle peel.

You will then want to cut your carrots into fry shapes 🙂 I personally like both crunchy and soft fries in my basket so I vary the sizes.

Place your carrots on a baking sheet and toss them in olive oil, Himalayan pink salt and black pepper.  I coat the carrots pretty good with the olive oil, but tend to go on the lighter side with my seasonings.  Feel free to flavor these fries to your liking 🙂

Bake at 425 degrees for 22 minutes, flipping halfway between cooking time.

Allow to cool in basket or on a plate and serve! I hope you enjoy this recipe brought to you by Mother Earth 🙂
